    Prepare the Irish Soda Bread

    In a large bowl, mix together flour, baking soda, and salt. Make a well in the center and pour in the buttermilk. Mix until the dough comes together, then knead lightly on a floured surface for about 5 minutes until smooth. Shape into a round loaf and place on a baking sheet.

    Bake the Bread

    Preheat the oven to 425°F (220°C). Cut a cross into the top of the loaf and bake for 30-35 minutes until golden brown and sounds hollow when tapped. Let cool before slicing.

    Prepare the Corned Beef

    Place the corned beef in a large pot and add the beef broth, bay leaves, and black peppercorns. Bring to a boil, then reduce to a simmer.

    Cook the Corned Beef

    Cover and cook for about 2.5 hours, skimming off any foam that rises to the top. After 2.5 hours, add the carrots, potatoes, and cabbage to the pot.

    Finish Cooking

    Continue to cook for an additional 30-45 minutes until the vegetables are tender and the beef is fork-tender. Remove from heat and let rest for 10 minutes before slicing.

    Scoop mint chocolate chip ice cream into bowls. Drizzle with chocolate syrup and garnish with fresh mint leaves.
