    Remove the filet mignon from the refrigerator and allow it to sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

    Take the hickory-smoked bacon slices and wrap them around the filet mignon, securing them with toothpicks if necessary.

    Heat the Pan

    In a heavy skillet or cast iron pan, heat the olive oil over medium-high heat until it shimmers.

    Evenly sprinkle salt and black pepper on all sides of the wrapped filet mignon.

    Place the filet mignon in the hot skillet and sear for about 4-5 minutes on each side, until a golden-brown crust forms.
