Preparation
- 1
Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and allow it to sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.
- 2
Wrap with Bacon
Take the hickory-smoked bacon slices and wrap them around the filet mignon, securing them with toothpicks if necessary.
Cooking
- 3
- 4
Season the Steak
Evenly sprinkle salt and black pepper on all sides of the wrapped filet mignon.
- 5
Sear the Steak
Place the filet mignon in the hot skillet and sear for about 4-5 minutes on each side, until a golden-brown crust forms.
- 6
Finish Cooking
If you prefer your steak medium-rare, the internal temperature should reach 130°F (54°C). For medium, aim for 140°F (60°C). You can finish cooking in the oven at 400°F (200°C) for an additional 5-10 minutes if needed.
Resting
- 7
Rest the Steak
Remove the filet mignon from the skillet and let it rest on a cutting board for at least 5 minutes before slicing. This helps retain the juices.
