Preparation

    Prepare the Beef

    Preheat your oven to 350°F (175°C). Season the prime rib with salt and pepper. Place it in a roasting pan, and roast for about 30-40 minutes or until it reaches your desired doneness. Allow it to rest for 10 minutes before slicing thinly.

    Slice the Vegetables

    While the beef is resting, slice the bell pepper and onion into thin strips. Set aside for sautéing.

Cooking

    Sauté the Peppers and Onions

    In a skillet, heat a tablespoon of oil over medium heat. Add the sliced bell peppers and onions, and sauté for about 5-7 minutes, or until they are tender and slightly caramelized. Remove from heat.

    Prepare the Au Jus

    In a saucepan, combine the beef broth, Worcestershire sauce, garlic powder, and black pepper. Bring to a simmer over medium heat. Allow it to cook for about 5 minutes, then remove from heat.

Assembly

    Assemble the Sandwiches

    Slice the French rolls in half and layer each roll with slices of prime rib. Top each sandwich with sautéed peppers and onions, followed by two slices of Swiss cheese.

    Melt the Cheese

    Place the assembled sandwiches on a baking sheet and put them in the oven for about 5 minutes or until the cheese is melted and bubbly.

Serving
