Steak Preparation
- 1
Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.
- 2
Season the Steak
Rub the steaks with olive oil, then season generously with salt and black pepper on both sides.
- 3
Sear the Steak
Heat a skillet over high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare doneness.
- 4
Add Aromatics
In the last minute of cooking, add crushed garlic cloves and fresh rosemary to the skillet for extra flavor.
- 5
Rest the Steak
Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.
Side Dish Preparation
- 6
Prepare the Asparagus
Trim the tough ends off the asparagus and rinse them under cold water.
- 7
Season the Asparagus
Drizzle olive oil over the asparagus and sprinkle with salt. Toss well to coat.
- 8
Roast the Asparagus
Place the asparagus on a baking sheet and roast in the oven at 400°F (200°C) for 15-20 minutes until tender and slightly crispy.
- 9
Add Lemon Juice
Once roasted, remove from the oven and drizzle with fresh lemon juice before serving.
