Preparing Cajun Spice Mix

Make the Spice Mix
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Mix well until all ingredients are evenly combined.
Preparing the Prime Rib

Season the Prime Rib
Take the 7 oz piece of prime rib and rub the prepared Cajun spice mix generously over all sides of the meat. Let it sit for about 15 minutes to absorb the flavors.

Cook the Prime Rib
Preheat your grill or cast-iron skillet over high heat. Once hot, place the seasoned prime rib on the grill or skillet. Sear the meat for about 4-5 minutes on each side until a blackened crust forms, and the internal temperature reaches your desired doneness (130°F for medium-rare).
Preparing Horseradish Cream

Make the Horseradish Cream
In a mixing bowl, combine sour cream, prepared horseradish, and lemon juice. Stir until smooth and well combined. Season with salt to taste.

Once the prime rib is cooked to your liking, remove it from heat and let it rest for a few minutes. Cut into bite-sized pieces and serve with a generous dollop of horseradish cream on the side.
