Chicken Marinade

Spicy Lime Dressing

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine chopped lemongrass, minced garlic, fish sauce, brown sugar, and black pepper. Mix well.

  2. 2

    Marinate the Chicken

Add the boneless chicken thighs to the marinade and ensure they are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for better flavor.

Grilling the Chicken

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 4

    Grill the Chicken

Remove chicken from the marinade and place on the grill. Grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Remove from heat and let it rest for a few minutes.

Preparing the Spicy Lime Dressing

  1. 5

    Mix the Dressing

In a small bowl, whisk together lime juice, fish sauce, chili flakes, honey, and minced garlic until well combined.

Assembling the Salad

  1. 6

    Combine Salad Ingredients

In a large bowl, combine sliced cucumbers, halved cherry tomatoes, thinly sliced red onion, and fresh mint leaves.

  2. 7

    Dress the Salad

Drizzle the spicy lime dressing over the salad and gently toss to combine.

Serving

  1. 8

    Serve the Dish

Slice the grilled chicken and serve it on a plate alongside the salad. Drizzle any remaining dressing over the chicken if desired.
