Thai Tea Base

    Brew the Thai Tea

    In a saucepan, bring 2 cups of water to a boil. Once boiling, add 2 tablespoons of Thai tea leaves and simmer for about 5 minutes.

    Sweeten the Tea

    Remove from heat and strain the tea into a bowl or pitcher. Stir in 3 tablespoons of sugar and mix until dissolved. Allow to cool.

    Add Condensed Milk

    Once the tea has cooled, add 4 tablespoons of condensed milk to the tea and stir well until fully combined.

Lemongrass Syrup

    Prepare the Lemongrass

    Chop the lemongrass stalks into small pieces and place them into a saucepan.

    Make the Syrup

    Add 1 cup of water and 1 cup of sugar to the saucepan with the lemongrass. Bring the mixture to a boil, stirring until the sugar is dissolved.

    Simmer and Strain

    Reduce the heat and let the mixture simmer for 10 minutes. Remove from heat and strain the syrup into a jar, discarding the lemongrass pieces. Allow to cool.

Assembly

    Combine the Ingredients

    In a glass, combine 1 cup of the brewed Thai tea with 2 tablespoons of lemongrass syrup. Stir well.

    Add Soda Water

    Carefully pour in 1 cup of soda water, stirring gently to combine without losing fizz.

    Top with Whipped Cream

    Finish by topping the drink with 1 cup of whipped cream. Optionally, drizzle additional lemongrass syrup on top for garnish.
