Slice the Beef
Thinly slice the beef sirloin against the grain into strips about 1/4 inch thick.

In a large bowl, combine soy sauce, brown sugar, fish sauce, red chili flakes, garlic powder, ground black pepper, coriander powder, and lime juice. Mix well until the sugar dissolves.

Add the sliced beef to the marinade, ensuring each piece is completely coated. Cover the bowl with plastic wrap and refrigerate for at least 6 hours, preferably overnight for maximum flavor.
Dehydrating the Beef

If using a dehydrator, set it to 160°F (70°C). If using an oven, preheat it to the lowest setting, ideally around 160°F (70°C) as well.

Remove the beef from the marinade and pat it dry with paper towels. Arrange the strips in a single layer on the dehydrator trays or on a baking sheet lined with parchment paper.

Dehydrate the beef for 6 to 8 hours in the dehydrator or 4 to 6 hours in the oven, flipping the strips halfway through, until the jerky is firm and has a slight bend without breaking.

Let the jerky cool completely before storing. Store in an airtight container or zip-lock bag in a cool, dark place for up to 1 month.
