Method

Preparing the fish

    Clean the fish

    Rinse the pompano fish under cold water and pat dry with paper towels.

    Season the fish

    Sprinkle salt and black pepper over both sides of the fish, ensuring even coverage.

    Dredge in flour

    Lightly coat the seasoned fish in all-purpose flour, shaking off any excess flour.

Frying the fish

    Heat the oil

    In a large frying pan, heat 2 cups of oil over medium-high heat until hot.

    Fry the fish

    Carefully place the coated fish in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crisp. Remove and drain on paper towels.

Making the tamarind sauce

    Prepare the aromatics

    Mince the garlic, chop the onion, and dice the roasted red pepper.

    Combine sauce ingredients

    In a saucepan, mix tamarind paste, water, brown sugar, soy sauce, and red chili flakes. Stir well and bring to a simmer.

    Add aromatics

    Add minced garlic, chopped onion, and diced roasted red pepper to the sauce. Cook for 5-7 minutes until the onion is translucent and the sauce thickens slightly.

Serving

    Plate the fish

    Place the fried pompano fish on a serving platter.

    Drizzle sauce

    Spoon the spicy tamarind sauce over the fish.

    Garnish and serve

    Garnish with fresh herbs if desired and serve immediately with steamed rice.
