Cook Vermicelli Noodles
In a pot of boiling water, add the vermicelli noodles and cook according to package instructions, usually about 3-4 minutes until soft. Drain and rinse under cold water to stop cooking.

Prepare Mint
Rinse the fresh mint leaves under cold water and pat them dry with a paper towel.

Soften Rice Paper Wraps
Fill a large bowl with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes pliable. Remove and lay it flat on a clean surface.

Assemble the Filling
In the center of the softened rice paper, place a small amount of vermicelli noodles, cucumber strips, carrot matchsticks, and a few mint leaves.

Roll Up the Summer Roll
Fold the sides of the rice paper over the filling, then roll it tightly from the bottom up, making sure to keep the filling secure. Repeat with remaining rice paper sheets and filling.

In a small bowl, combine soy sauce, peanut butter, lime juice, honey, and water. Whisk together until smooth and well combined.
