Method
Prepare Tofu

Press the Tofu
Wrap the firm tofu in a clean kitchen towel and place a heavy object on top. Let it sit for at least 20 minutes to remove excess moisture.

Cube the Tofu
After pressing, cut the tofu into 1-inch cubes.

Coat with Cornstarch
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Prepare Sauce

Mix the Sauce Ingredients
In a bowl, combine tamarind paste, soy sauce, brown sugar, minced garlic, grated ginger, red chili flakes, and water. Mix well until the sugar is dissolved.
Cook Tofu

Heat Oil
In a large non-stick skillet or wok, heat vegetable oil over medium-high heat.

Fry Tofu
Add the coated tofu cubes to the skillet in a single layer. Fry for about 5-6 minutes until golden brown and crispy on all sides. Remove and set aside.
Combine and Serve

Add Sauce to Skillet
In the same skillet, pour in the sauce mixture and bring it to a simmer over medium heat.

Combine Tofu with Sauce
Add the fried tofu back into the skillet, tossing to coat the tofu in the sauce. Cook for an additional 2-3 minutes to heat through.

Optional Add-ins
If using shrimp or beef, add them to the sauce during the simmering step and cook until just cooked through (about 3-4 minutes for shrimp, 5-7 minutes for beef).

Garnish and Serve
Once cooked, sprinkle sesame seeds and chopped spring onions on top. Serve hot with steamed rice.
