Preparation

    Prepare the Pickles

    In advance, prepare the pickled daikon and carrots. Combine equal parts vinegar and water in a bowl, add sugar and salt, stirring until dissolved. Add sliced daikon and carrots, cover and refrigerate for at least 1 hour.

    Slice the Vegetables

    Slice the cucumber and jalapeño into thin strips. Set aside.

    Toast the Baguettes

    Preheat the oven to 350°F (175°C). Slice the baguettes in half lengthwise and place them on a baking sheet. Toast in the oven for about 5-7 minutes until crispy.

    Assemble the Banh Mi

    Spread pâté on one side of each toasted baguette. Add a layer of house mayo on the opposite side, then layer pickled daikon, pickled carrots, cucumber strips, jalapeño slices, and fresh cilantro. Drizzle with Maggi seasoning and Sriracha to taste.

    Serve

    Close the baguettes, cut them into smaller portions if desired. Arrange on a tray and serve immediately.
