    Soak the Noodles

    Place the flat rice noodles in a large bowl and cover them with hot water. Let them soak for about 20-30 minutes or until they are soft. Drain and set aside.

    Prepare the Chicken

    While the noodles are soaking, slice the chicken breast into thin strips. Season with a pinch of salt and black pepper.

    Chop the Vegetables

    Prepare the Chinese broccoli, carrots, and bell pepper by chopping them into bite-sized pieces.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Set aside.

Cooking

    Stir-Fry the Chicken

    Heat a large wok or frying pan over medium-high heat. Add a tablespoon of oil and stir-fry the sliced chicken for about 3-4 minutes until cooked through. Remove the chicken and set aside.

    Cook the Vegetables

    In the same wok, add a little more oil if needed. Stir-fry the carrots and bell pepper for 2-3 minutes, then add the Chinese broccoli and continue to cook for another 2 minutes until the vegetables are tender but still crisp.

    Add the Noodles and Sauce

    Add the soaked and drained noodles to the wok along with the prepared sauce. Toss everything together and stir-fry for another 2-3 minutes until the noodles are heated through and well-coated with sauce.

    Add the Eggs

    Push the noodle mixture to one side of the wok, crack the eggs into the empty space, and scramble them until just set. Mix the eggs into the noodles.

    Combine Chicken and Garnish

    Return the cooked chicken to the wok and stir everything together. Remove from heat and garnish with chopped scallions and cilantro.
