Marinade Preparation

    Prepare the Marinade

    In a bowl, mix together the soy sauce, peanut butter, brown sugar, minced garlic, minced ginger, lime juice, coconut milk, chili flakes, and salt to taste until smooth.

    Marinate the Chicken/Tofu

    Cut the chicken breast (or tofu) into bite-sized pieces. Add the chicken/tofu to the marinade and mix well to ensure all pieces are coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.

Grilling

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Skewer the Chicken/Tofu

    Thread the marinated chicken/tofu onto the soaked skewers. Leave a little space between each piece for even cooking.

    Preheat the Grill

    Preheat your grill or grill pan over medium-high heat. Brush the grill with vegetable oil to prevent sticking.

    Grill the Skewers

    Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. For tofu, grill until heated through and slightly charred.

Serving

    Plate the Satay

    Remove the skewers from the grill and let them rest for a couple of minutes.

    Serve with Accompaniments

    Serve the satay with peanut sauce for dipping, sliced cucumber, and fresh cilantro leaves for garnish.
