Preparing the Roti

Make the Dough
In a large bowl, mix the all-purpose flour and salt together. Add the warm water and vegetable oil, and knead until you have a smooth and elastic dough. Cover with a damp cloth and let it rest for 30 minutes.

Shape the Roti
After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle on a floured surface.

Fry the Roti
In a deep frying pan, heat the oil for frying over medium heat. Carefully place the rolled roti into the hot oil and fry until golden brown on both sides. Remove and drain on paper towels.

Add the Curry Powder
Stir in the yellow curry powder and cook for another minute, allowing the spices to toast slightly.

Combine with Coconut Milk
Pour in the coconut milk and bring to a gentle simmer. Stir to combine all the ingredients.

Add Vegetables
Add the mixed vegetables to the curry and cook for about 10-15 minutes, or until the vegetables are tender. Season with salt to taste.

Once the curry is ready, serve it warm over the crispy roti. Garnish with fresh cilantro.
