Prepare the Dough
In a large mixing bowl, combine all-purpose flour, salt, sugar, and baking powder. Mix well.

Add Water and Oil
Slowly add water and 2 tablespoons of vegetable oil to the flour mixture, kneading until a smooth dough forms.

Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Shape the Roti
Divide the dough into small balls (about 10). Roll each ball into a thin circle on a floured surface.

Fry the Roti
Heat oil in a deep frying pan over medium heat. Fry each roti until golden brown and crispy on both sides. Drain on paper towels.
Yellow Curry Sauce

Heat the Coconut Milk
In a saucepan, heat 2 cups of coconut milk over medium heat until it begins to simmer.

Add Curry Paste
Stir in the yellow curry paste and mix until well combined. Let it cook for 2-3 minutes.

Incorporate Broth and Seasonings
Add the vegetable broth, brown sugar, soy sauce, and lime juice. Stir and let it simmer for an additional 5 minutes.

Finish with Cilantro
Remove from heat and stir in chopped cilantro. Adjust seasoning to taste.
