Prepare the Protein
Choose your protein: chicken, tofu, or shrimp. If using chicken, cut it into bite-sized pieces. If using tofu, press to remove excess moisture, then cut into cubes. If using shrimp, peel and devein if necessary.

Mix Sauce
In a small bowl, combine soy sauce, oyster sauce, sesame oil, cornstarch, and water. Stir until well mixed. Set aside.

Prepare Spices
Mince the garlic and ginger. Set aside.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.

Combine Everything
Return the cooked protein to the skillet with the vegetables. Pour the sauce mixture over the stir-fry, and toss to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens.

Serve the stir-fry over a bed of cooked rice. Garnish with chopped green onion and sesame seeds to taste.
