Prepare the Waffle Batter

Mix Dry Ingredients
In a large mixing bowl, combine the rice flour, baking powder, salt, and sugar. Whisk together until well combined.

Whisk Wet Ingredients
In another bowl, whisk together the coconut milk, eggs, pandan extract, and vegetable oil until smooth and well combined.

Combine Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and gently fold together using a spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Cook the Waffles

Preheat Waffle Iron
Preheat your waffle iron according to the manufacturer’s instructions until it’s hot and ready.

Cook the Waffles
Lightly grease the waffle iron with a small amount of oil or non-stick spray. Pour the batter into the preheated waffle iron, using about 1/2 cup of batter for each waffle, or according to your waffle iron's size. Close the lid and cook until the waffles are golden brown and crisp, about 4-5 minutes.

Carefully remove the waffles from the iron and serve warm, drizzled with condensed milk and topped with shredded coconut if desired.
