Preparation

    Cook the Rice

    Rinse the jasmine rice under cold water until the water runs clear. Cook the rice in a rice cooker or on the stovetop according to package instructions. Allow to cool and fluff with a fork.

    Prepare the Vegetables

    Dice the carrots, bell pepper, and slice the green onions. Set aside. Measure out the green peas.

    Prepare the Protein

    If using chicken, dice the chicken breast into bite-sized pieces. Beat the eggs in a small bowl and set aside.

Cooking

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Chicken

    Add the diced chicken to the skillet and stir-fry for about 5-7 minutes or until cooked through. Remove from skillet and set aside.

    Scramble the Eggs

    In the same skillet, pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the chicken.

    Stir-Fry the Vegetables

    Add the carrots, bell pepper, and green peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

    Combine Ingredients

    Return the chicken and scrambled eggs to the skillet with the vegetables. Add the cooled jasmine rice.

    Season the Fried Rice

    Pour in the soy sauce and sesame oil. Season with salt and black pepper to taste. Stir everything together until well combined and heated through.

    Garnish and Serve

    Add the sliced green onions and toss lightly. Serve hot.
