Preparation

    Prepare the Rice

    Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and water in a pot.

    Cut the Vegetables

    Peel and dice the potatoes and carrots into bite-sized pieces. Chop the onion into thin slices.

    Prepare the Protein

    Cut the chicken breast into bite-sized pieces. Season with salt and pepper.

Cooking

    Cook the Rice

    Bring the pot of rice to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is tender and the water is absorbed.

    Sauté the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.

    Add Protein

    Add the chicken pieces to the pot with onions, stirring until the chicken is browned on all sides.

    Add Curry Paste

    Stir in the massaman curry paste, cooking for another 2-3 minutes until fragrant.

    Incorporate Coconut Milk and Stock

    Pour in the coconut milk and stock, stirring to combine. Bring to a gentle simmer.

    Add Vegetables

    Add the diced potatoes and carrots to the curry mixture. Cover and let cook for 20-25 minutes, or until the vegetables are tender.

    Finish with Garnish

    Once the curry is cooked, stir in the roasted peanuts. Serve hot over the cooked jasmine rice and garnish with fresh cilantro.
