    Prepare the Rice

    If using leftover rice, ensure it is cold and clumped together. If cooking fresh rice, prepare it according to package instructions and let it cool before using.

    Prepare the Protein

    If using chicken, shrimp, or tofu, chop into bite-sized pieces. Season with a pinch of salt and pepper.

    Chop the Vegetables

    Dice the carrot, bell pepper, and chop the green onions. Set all vegetables aside.

Cooking

    Cook the Protein

    In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the diced chicken, shrimp, or tofu and cook until golden brown and cooked through, approximately 5-7 minutes. Remove from the pan and set aside.

    Sauté the Vegetables

    In the same pan, add the remaining 2 tablespoons of vegetable oil. Add the diced carrot, bell pepper, and green peas. Stir-fry for about 3-4 minutes until the vegetables are tender.

    Scramble the Eggs

    Push the vegetables to one side of the pan and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix with the vegetables.

    Combine Ingredients

    Add the cooked rice to the pan, followed by the cooked protein. Pour in the soy sauce, sesame oil, and season with salt and black pepper. Stir everything together and cook for another 5 minutes until heated through.

    Finish with Green Onions

    Add the chopped green onions and stir to combine. Cook for an additional minute before removing from heat.
