In a blender or food processor, combine the lemongrass stalks (chopped into smaller pieces), garlic cloves, ginger, soy sauce, honey, lime juice, olive oil, salt, and black pepper. Blend until smooth.

Place the boneless chicken breasts in a large zip-lock bag or a glass dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish with plastic wrap. Marinate in the refrigerator for at least 2 hours, or overnight for best flavor.
