Method

Preparation

  1. 1

    Prepare the Noodles

Cook the ramen noodles according to package instructions. Drain and set aside.

  2. 2

    Prepare the Protein

If using chicken, dice it into bite-sized pieces. If using tofu, press to remove excess moisture and cut into cubes. For shrimp or beef, ensure they are cleaned and sliced appropriately.

Cooking

  1. 3

    Sauté Aromatics

In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1-2 minutes.

  2. 4

    Add Protein

Add your chosen protein (chicken, tofu, shrimp, or beef) to the pot. Cook until the protein is cooked through (about 5-7 minutes for chicken and shrimp, 7-10 minutes for beef, and 3-5 minutes for tofu).

  3. 5

    Incorporate Broth and Spices

Stir in the red curry paste, then add the chicken broth, coconut milk, soy sauce, fish sauce, salt, and black pepper. Bring to a simmer.

  4. 6

    Add Vegetables

Add the sliced bell pepper and julienned carrot to the pot. Simmer for an additional 5-8 minutes until the vegetables are tender.

Serving

  1. 7

    Assemble the Soup

In a bowl, place a serving of the cooked ramen noodles. Ladle the hot soup over the noodles, ensuring a good mix of protein and vegetables.

  2. 8

    Garnish

Top with chopped green onions, cilantro, and serve with lime wedges on the side for squeezing over the soup.
