Preparing the Pork Belly

Prepare the Pork Belly
Preheat your grill to medium-high heat (about 400°F). While the grill heats up, season the pork belly with salt, black pepper, and garlic powder. Rub the olive oil all over the meat to help the seasoning stick.

Grill the Pork Belly
Once the grill is heated, place the pork belly on the grill. Cook for about 15-20 minutes on each side, or until the exterior is crispy and the internal temperature reaches 190°F. Remove from the grill and let it rest for 10 minutes.
Making the Spicy Chili Lime Sauce

Combine Ingredients
In a medium bowl, whisk together the fresh lime juice, chili paste, honey, minced garlic, soy sauce, salt, and black pepper until well combined.

Add Cilantro
Stir in the chopped cilantro into the sauce mixture and set aside for serving.
Serving the Dish

Slice and Serve
After resting, slice the grilled pork belly into bite-sized pieces. Serve on a platter with the spicy chili lime sauce drizzled over the top or on the side for dipping.
