Grilled Lemongrass Chicken Recipe

Marinade Preparation

Prepare the Marinade
In a food processor, combine the lemongrass (chopped), turmeric powder, garlic (minced), shallots (chopped), fish sauce, brown sugar, black pepper, and vegetable oil. Blend until smooth.

Marinate the Chicken
Place the chicken thighs in a large bowl or a zip-lock bag. Pour the marinade over the chicken, ensuring they are well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.
Nuoc Cham Sauce Preparation

Make the Nuoc Cham
In a small bowl, mix together the fish sauce, lime juice, water, and sugar until the sugar dissolves.

Add Garlic and Chili
Finely chop the garlic cloves and chili peppers and add them to the sauce. Stir well and set aside.
Grilling the Chicken

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).

Grill the Chicken
Remove the chicken from the marinade and discard any remaining marinade. Place the chicken thighs on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.

Slice the grilled chicken if desired and serve it hot with the nuoc cham sauce on the side for dipping.
