    Dice the chicken breast into bite-sized pieces. Slice the bell pepper and carrot into thin strips. Cut the broccoli into small florets.

    Cook Chicken

    In a large pan or wok, heat the vegetable oil over medium heat. Add the diced chicken and cook for about 5-7 minutes or until the chicken is cooked through and no longer pink.

    Add Green Curry Paste

    Stir in the green curry paste to the cooked chicken, mixing well to coat the chicken evenly. Cook for an additional 2 minutes until fragrant.

    Pour in the coconut milk, stirring to combine. Allow the mixture to come to a gentle simmer.

    Add Vegetables

    Add the broccoli florets, bell pepper, and carrot to the pan. Stir well and let simmer for 10 minutes, or until the vegetables are tender.
