Prepare the Ginger Chicken

    Marinate the Chicken

    In a large bowl, combine grated ginger, minced garlic, soy sauce, honey, sesame oil, salt, and black pepper. Add the chicken thighs to the bowl and mix well to coat. Cover and marinate in the refrigerator for at least 30 minutes, preferably 1 hour.

    Cook the Chicken

    Preheat a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Add the reserved marinade to the skillet and cook for an additional 3-5 minutes until the sauce thickens slightly.

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine rinsed rice, water, and salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let sit, covered, for 5 minutes before fluffing with a fork.

    Sauté the Bok Choy

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the bok choy and salt, and cook for about 5-7 minutes until the bok choy is tender but still crisp.

    Plate the Dish

    In a bowl, serve a portion of rice topped with the ginger chicken and a side of sautéed bok choy. Drizzle some extra sauce from the skillet over the chicken if desired.
