Salad Preparation

    Prepare the Edamame

    In a pot of boiling water, add the shelled edamame and cook for about 5 minutes until tender. Drain and set aside to cool.

    Chop the Vegetables

    While the edamame is cooking, dice the cucumber, red bell pepper, and shred the carrot. Slice the green onions.

    Combine Salad Ingredients

    In a large bowl, combine the cooked edamame, diced cucumber, diced red bell pepper, shredded carrot, sliced green onions, and mixed greens. Toss gently to mix.

Dressing Preparation

    Make the Dressing

    In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, grated ginger, minced garlic, and a pinch of salt and black pepper.

    Add Sesame Seeds

    Stir in the sesame seeds into the dressing mixture.

Final Assembly

    Pour the dressing over the salad mixture and toss well to coat all ingredients evenly.
