Chicken Marinade Preparation

Prepare the Marinade
In a large bowl, combine soy sauce, peanut butter, brown sugar, curry powder, ground cumin, minced garlic, grated ginger, lime juice, and vegetable oil. Whisk until the mixture is smooth and well combined.

Marinate the Chicken
Cut chicken thighs into bite-sized pieces and add to the marinade. Stir to coat the chicken thoroughly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
Peanut Sauce Preparation

Make the Peanut Sauce
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red pepper flakes. Stir until smooth and heated through. Remove from heat and set aside.
Grilling the Chicken

Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serving

Serve the Chicken Satay
Arrange the grilled chicken skewers on a serving platter. Drizzle with peanut sauce and garnish with chopped cilantro. Serve with lime wedges on the side.
