Dough Preparation

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Gradually add water, mixing until the dough starts to come together.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Cover with a damp cloth and let rest for at least 30 minutes.

Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine ground chicken, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assembling Potstickers

    Form the Potstickers

    Divide the rested dough into small pieces and roll each piece into a thin circle. Place about 1 tablespoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Cooking Potstickers

    Cook the Potstickers

    Heat a non-stick skillet over medium heat and add a little oil. Place potstickers in the skillet and cook for about 2-3 minutes until the bottoms are golden brown.

    Steam the Potstickers

    Add about 1/4 cup of water to the skillet, cover with a lid, and let steam for about 5-7 minutes until the water evaporates and the potstickers are cooked through.

Dipping Sauce Preparation

    Mix the Dipping Sauce

    In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili oil, and sugar until well combined.
