Preparation

    Soak the Noodles

    Soak the wide rice noodles in warm water for about 30 minutes until softened. Drain and set aside.

    Prepare the Proteins

    If using shrimp, make sure they are peeled and deveined. Slice the chicken breast thinly. Beat the eggs in a bowl and set aside.

Cooking

    Stir-Frying

    Heat 3 tablespoons of cooking oil in a large wok or frying pan over high heat. Add minced garlic and stir-fry until fragrant.

    Add Proteins

    Add the shrimp and sliced chicken to the wok. Stir-fry until the shrimp turns pink and the chicken is cooked through.

    Add Noodles

    Add the drained rice noodles to the wok, tossing them with the protein for about 2 minutes.

    Incorporate the Sauce

    Pour in the dark soy sauce, sweet soy sauce, oyster sauce, and sesame oil. Stir-fry everything together until the noodles are well-coated in the sauce.

    Add Vegetables and Eggs

    Add the bean sprouts, chives, and beaten eggs. Stir-fry for another 2-3 minutes until the eggs are cooked and the vegetables are tender.

    Season

    Season with salt and white pepper to taste. Toss everything well.

Serving

    Plate and Serve

    Transfer the char kway teow to serving plates. Garnish with sliced red chili if desired. Serve hot.
