    Make the Pie Crust

    In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

    Prepare the Filling

    In another bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and water. Toss to coat the apples evenly.

    Assemble the Pie

    Preheat the oven to 425°F (220°C). Roll out one disc of dough to fit a 9-inch pie pan. Place the bottom crust in the pan and fill with the apple mixture. Roll out the second disc, place it over the filling, and seal the edges. Cut slits in the top crust to allow steam to escape.

    Bake the Pie

    Brush the top crust with beaten egg for a golden finish. Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes until the apples are tender and the crust is golden brown.

    Once baked, remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing. Serve warm or at room temperature.
