Preparation

    Prepare the Calamari

    In a bowl, mix chickpea flour, salt, black pepper, and chili powder. Dredge the calamari rings in the mixture until well coated.

    Make Coconut Lime Raita

    In a bowl, combine coconut yogurt, lime juice, chopped cilantro, and salt. Mix well and set aside.

    Prepare Tomato Sumac Jam

    In a saucepan, combine chopped tomatoes, sugar, sumac, and salt. Cook over medium heat until thickened, about 20 minutes. Let cool before serving.

    Make Pistachio Dukkah

    Toast cumin seeds, coriander seeds, and sesame seeds in a dry pan until fragrant. Let cool, then blend with pistachios and salt until coarsely ground.

Cooking

    Fry the Calamari

    Heat oil in a deep frying pan over medium-high heat. Fry the coated calamari rings in batches until golden brown and crisp, about 2-3 minutes. Drain on paper towels.
