Method
Pancake Preparation
Make the Pancake Batter
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and gochugaru. In a separate bowl, whisk together water and eggs. Slowly add the wet mixture to the dry ingredients and mix until just combined. Fold in green onions, shrimp, and crab meat.
Cook the Pancakes
Heat a non-stick skillet over medium-high heat and lightly grease with oil. Pour a ladle of the batter into the skillet and spread it out. Cook for about 3-4 minutes on each side until golden brown and crispy. Repeat with remaining batter.
Sauce Preparation
Make the Tonkatsu Sauce
In a small bowl, whisk together ketchup, Worcestershire sauce, soy sauce, sugar, and mustard powder until well combined.
Make the Sambal Aioli
In another bowl, mix together mayonnaise, sambal oelek, minced garlic, and lemon juice until smooth.
Kimchi Preparation
Prepare the Daikon Kimchi
In a large bowl, combine julienned daikon radish with salt and allow it to sit for 30 minutes. Rinse and drain the excess water. Add gochugaru, minced garlic, sugar, chopped green onions, julienned carrot, and rice vinegar. Mix well and let it marinate for at least 1 hour before serving.
