Method

Base Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

  2. 2

    Cream Butter and Sugar

In another bowl, beat the softened butter until creamy. Gradually add the sugar and beat until light and fluffy.

  3. 3

    Add Eggs and Vanilla

Add the eggs one at a time to the butter mixture, beating well after each addition. Finally, mix in the vanilla extract.

  4. 4

    Combine Mixtures

Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.

Filling Preparation

  1. 5

    Prepare Cream Cheese Mixture

In a medium bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and mix until combined. Then add lemon juice and mix well until creamy.

Assembly and Topping

  1. 6

    Layer the Base and Filling

In a greased baking dish, spread half of the base mixture evenly. Top with the cream cheese filling, then spread the remaining base mixture over the top.

  2. 7

    Bake

Preheat the oven to 350°F (175°C) and bake for 25-30 minutes or until the top is golden and a toothpick inserted comes out clean.

  3. 8

    Cool and Add Toppings

Once baked, let it cool completely. Top with fresh berries and mint leaves before serving.
