    Prepare the Oxtails

    Rinse the oxtails under cold water and pat them dry with paper towels. Season the oxtails generously with salt and black pepper.

    Chop the Vegetables

    Dice the onion, slice the carrots, and chop the celery stalks into bite-sized pieces. Mince the garlic cloves.

    Brown the Oxtails

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the seasoned oxtails and sear them on all sides until browned, about 4-5 minutes per side. Remove the oxtails from the pot and set aside.

    In the same pot, add the diced onion, carrots, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.
