Duck Preparation

Method

Duck Preparation

  1. 1

    Clean and Season the Duck

Start by cleaning the whole duck under cold water. Pat dry with paper towels. Once dry, season the duck inside and out with salt, black pepper, garlic powder, and onion powder. Make sure to rub the seasonings evenly over the skin.

  2. 2

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  3. 3

    Roast the Duck

Place the seasoned duck on a roasting rack in a baking tray. Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C). Baste the duck with its own juices every 30 minutes.

BBQ Sauce Preparation

  1. 4

    Make the BBQ Sauce

In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Mix well and bring to a simmer over medium heat.

  2. 5

    Simmer the Sauce

Once simmering, reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally, until the sauce thickens slightly.

Finishing the Duck

  1. 6

    Glaze the Duck

After roasting, remove the duck from the oven and brush generously with the BBQ sauce. Return the duck to the oven and roast for an additional 15-20 minutes, allowing the sauce to caramelize.

  2. 7

    Rest and Serve

Once done, remove the duck from the oven and let it rest for 10 minutes before carving. Serve with remaining BBQ sauce on the side.
