Salad Preparation

    Prepare the Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

    Dress the Salad

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour over the salad and toss to combine.

    Cook the Quinoa

    Rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.

    Sauté Vegetables

    In a large skillet, heat a little olive oil over medium heat. Add diced bell pepper and zucchini; sauté for about 5 minutes until tender.

    Combine Ingredients

    Stir in black beans, corn, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes to heat through.

    Serve

    Fluff quinoa with a fork and serve topped with the vegetable mixture.

Dessert Preparation

    In a large bowl, mix almond flour, maple syrup, melted coconut oil, vanilla extract, baking soda, and salt until well combined.

    Add Chocolate Chips

    Fold in dark chocolate chips.

    Bake

    Preheat the oven to 350°F (175°C). Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until golden.
