Prepare the Vegetables
Wash and cut the vegetables into bite-sized pieces. Ensure they are all similar in size for even cooking.

Make the Batter
In a large bowl, sift together the all-purpose flour and cornstarch. In a separate bowl, whisk the egg and cold water together. Combine the wet ingredients with the dry ingredients and mix until just combined. A few lumps are okay; do not overmix. Season with salt.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip and Fry
Dip each piece of vegetable into the batter until well coated, then carefully place them in the hot oil. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes or until golden brown, turning occasionally for even cooking.

Drain and Serve
Using a slotted spoon, remove the fried vegetables from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with dipping sauce.
