Method
Prepare the Noodles
Cook the Soba Noodles
Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually around 5-7 minutes, until they are tender but still firm. Stir occasionally to prevent sticking.
Cool the Noodles
Once cooked, drain the noodles in a colander and rinse under cold water to stop the cooking process. Allow them to drain completely.
Prepare the Vegetables
Slice the Vegetables
Thinly julienne the cucumber, carrot, and radishes. Chop the green onions into small pieces.
Make the Sauce
Combine Sauce Ingredients
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey or agave syrup, minced garlic, and ginger. Adjust sweetness and spiciness by adding chili flakes to taste.
Assemble the Dish
Mix Everything Together
In a large bowl, combine the cooled soba noodles, sliced vegetables, and sauce. Toss until everything is well coated.
Garnish
Sprinkle sesame seeds and chopped cilantro or parsley over the top for garnish.
