Prepare the Ingredients

Chop the zucchini into bite-sized pieces. Dice the firm tofu into cubes. Mince the garlic and ginger. Chop the green onions, keeping the white parts separate from the green parts.

Clean the Clams

If using fresh clams, soak them in salted water for 30 minutes to help expel any sand. Rinse well before using.

In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.

Add Vegetables and Seasonings

Add the chopped zucchini and the white parts of the green onions to the pot. Sauté for another 3-4 minutes until the zucchini starts to soften.

Incorporate Soybean Paste

Stir in the soybean paste, ensuring it dissolves and coats the vegetables evenly. Cook for an additional 2 minutes.

Add Liquids

Pour in the water or seafood stock and bring to a simmer. Adjust the heat to maintain a gentle simmer.

Add Crab and Clams

Add the crab meat and clams to the pot. Cover and cook for about 5-7 minutes, or until the clams have opened and the crab is heated through.

Add Tofu

Gently fold in the diced tofu and allow the stew to simmer for an additional 3-5 minutes to heat the tofu.

Season and Serve

Season the stew with soy sauce, salt, and black pepper to taste. Garnish with the green parts of the green onions before serving.
