Prepare the Squid

Clean the squid thoroughly, removing the skin and innards. Cut the squid into rings and set aside.

Slice the Vegetables

Slice the bell peppers into thin strips, and slice the carrot thinly. Chop the green onions and set all vegetables aside.

Make the Sauce

Mix the Sauce Ingredients

In a small bowl, combine soy sauce, Sriracha sauce, honey, minced garlic, grated ginger, and sesame oil. Stir well to blend all the flavors.

Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Stir-fry the Vegetables

Add the sliced bell peppers and carrots to the skillet. Stir-fry for about 3-4 minutes until they start to soften but still remain crisp.

Add the Squid

Add the squid rings to the skillet with the vegetables. Stir-fry for another 2-3 minutes until the squid is opaque and cooked through.

Add the Sauce

Pour the prepared sauce over the stir-fried squid and vegetables. Toss everything together to coat evenly. Cook for an additional minute.

Season and Serve

Season with salt and black pepper to taste. Remove from heat, garnish with chopped green onions, and serve hot.
