Method

Preparation of Soybeans

  1. 1

    Soak the Soybeans

Rinse the soybeans thoroughly under cold water. Place them in a bowl and cover with water. Let them soak for at least 8 hours or overnight.

  2. 2

    Drain and Rinse

After soaking, drain the soybeans and rinse them again under cold water.

Making the Tofu

  1. 3

    Blend the Soybeans

Transfer the soaked soybeans to a blender and add 4 cups of fresh water. Blend on high speed until the mixture is smooth and creamy.

  2. 4

    Strain the Soy Milk

Pour the blended soybean mixture through a fine mesh strainer or cheesecloth into a large pot, separating the soy milk from the soybean pulp. Gather the cheesecloth and squeeze out as much liquid as possible.

  3. 5

    Heat the Soy Milk

Place the strained soy milk in a pot over medium heat. Bring it to a gentle boil, stirring occasionally to prevent sticking.

  4. 6

    Add the Coagulant

Once the soy milk reaches a boil, remove it from heat. Dissolve 1 tsp of coagulant in a small amount of warm water, then slowly stir it into the hot soy milk. Allow the mixture to sit for about 15 minutes to curdle.

  5. 7

    Press the Tofu

Line a tofu mold or a small rectangular container with cheesecloth. Pour the curdled soy milk into the mold, folding the cheesecloth over the top. Place a weight on top to press the tofu and let it sit for 20-30 minutes.

  6. 8

    Unmold the Tofu

Carefully remove the weight and unfold the cheesecloth. Gently take out the tofu from the mold. Your soft tofu is now ready!

Serving Suggestions
