Preparation of Soybeans

Soak the Soybeans
Rinse the soybeans thoroughly under cold water. Place them in a bowl and cover with water. Let them soak for at least 8 hours or overnight.

Drain and Rinse
After soaking, drain the soybeans and rinse them again under cold water.
Making the Tofu

Blend the Soybeans
Transfer the soaked soybeans to a blender and add 4 cups of fresh water. Blend on high speed until the mixture is smooth and creamy.

Strain the Soy Milk
Pour the blended soybean mixture through a fine mesh strainer or cheesecloth into a large pot, separating the soy milk from the soybean pulp. Gather the cheesecloth and squeeze out as much liquid as possible.

Press the Tofu
Line a tofu mold or a small rectangular container with cheesecloth. Pour the curdled soy milk into the mold, folding the cheesecloth over the top. Place a weight on top to press the tofu and let it sit for 20-30 minutes.

Unmold the Tofu
Carefully remove the weight and unfold the cheesecloth. Gently take out the tofu from the mold. Your soft tofu is now ready!

Cut the soft tofu into cubes. Season with salt, soy sauce, and sesame oil according to taste. Serve as a side dish or add to soups and salads.
