Preparation

    Rinse and Soak Rice

    Rinse the rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 6 hours or overnight.

    Cook Rice

    Drain the soaked rice and steam it in a steamer or rice cooker until fully cooked, approximately 30 minutes.

    Prepare Glutinous Rice and Barley

    While the rice is cooking, rinse and soak the glutinous rice and barley in water for about 4 hours. Drain and steam them separately.

Fermentation

    Combine Ingredients

    Once the rice, glutinous rice, and barley are cooked, let them cool slightly. In a fermentation vessel, combine the cooked rice, glutinous rice, and barley.

    Add Yeast

    Sprinkle the yeast over the mixture and mix well to ensure even distribution.

    Add Water

    Add 4 cups of water to the mixture. Stir well and cover the vessel with a clean cloth. Let it ferment at room temperature for about 1 week.

Distillation

    Strain Mixture

    After fermentation, strain the mixture through a fine mesh or cheesecloth to separate the liquid from the solids.

    Distill Liquid

    Transfer the strained liquid into a distillation apparatus and heat it slowly. Collect the distillate in a clean container as it comes out.

Flavoring and Bottling

    Flavor the Soju

    If desired, add one cup of fruit and one cup of sugar to the distilled soju. Stir until the sugar is dissolved.

    Bottle the Soju

    Pour the finished soju into clean bottles, seal them, and store them in a cool place.
