Preparing the Tofu

    Press the Tofu

    Place the soft tofu on a cutting board and cover it with a few layers of paper towels. Put a light weight (like a skillet or a few cans) on top to press it down for about 10 minutes. This will help remove excess moisture.

    Cut the Tofu

    After pressing, carefully unwrap the tofu and cut it into cubes or slices, depending on your preference. Aim for 1-inch cubes for even cooking.

Making the Marinade

    In a mixing bowl, combine the soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and chili flakes. Whisk together until well mixed.

Marinating the Tofu

    Marinate the Tofu

    In a shallow dish, place the tofu cubes and pour the prepared marinade over the top. Gently toss to coat all sides of the tofu. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
