Preparing the Pork Belly

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare the Pork Belly
Score the skin of the pork belly in a criss-cross pattern, being careful not to cut into the meat. Rub the pork belly with salt and black pepper.

Sear the Pork Belly
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy. Flip it over and sear the other side for another 5 minutes.

Roast the Pork Belly
Transfer the skillet to the preheated oven and roast for about 2 to 2.5 hours, or until the pork belly is tender. Check occasionally and baste with the rendered fat.

Rest the Pork
Once cooked, remove the pork belly from the oven and let it rest for 15 minutes before slicing.
Making the Spicy Sauce

Prepare the Sauce Ingredients
Mince the garlic cloves finely.

Combine Ingredients
In a bowl, mix together the Sriracha sauce, honey, minced garlic, soy sauce, rice vinegar, and sesame oil until well combined.

Heat the Sauce
Pour the sauce mixture into a small saucepan over medium heat. Bring to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until slightly thickened.
