Prepare the Ice Cream

    Scoop the Ice Cream

    Scoop the ice cream into balls using an ice cream scoop or spoon. Place the balls on a parchment-lined tray and freeze until firm, at least 1-2 hours.

Make the Mochi Dough

    Mix Dry Ingredients

    In a microwave-safe bowl, combine the sweet rice flour and granulated sugar. Whisk until well blended.

    Add Water

    Gradually add water to the dry mixture, stirring until smooth. If desired, add food coloring at this stage.

    Microwave the Mixture

    Cover the bowl with plastic wrap, leaving a small vent for steam. Microwave on high for 1 minute, stir, then microwave for an additional 1-2 minutes until the mixture is thick and sticky.

    Cool the Dough

    Once cooked, let the mochi dough cool for a few minutes until manageable but still warm.

Assemble the Mochi Ice Cream

    Prepare Cornstarch Surface

    Dust a clean surface with cornstarch to prevent sticking.

    Shape the Mochi

    Dust your hands with cornstarch and take a small portion of the mochi dough (about 2 inches in diameter). Flatten it into a round disc about 1/4 inch thick.

    Wrap the Ice Cream

    Place a frozen ice cream ball in the center of the mochi disc. Gently fold the edges of the mochi over the ice cream and pinch to seal. Make sure it is well sealed to prevent leaking.

    Repeat the Process

    Continue shaping and wrapping the remaining ice cream balls with mochi dough. Dust with cornstarch to prevent sticking as needed.

Freeze the Mochi Ice Cream

    Final Freeze

    Place the finished mochi ice cream balls back on the parchment-lined tray and freeze for at least 1 hour before serving. This will help them firm up.
