Cook the Grains
In a medium pot, combine 1 cup of brown rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes until the rice is tender and water is absorbed. In a separate pot, combine 0.5 cup of quinoa and 1 cup of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Once cooked, fluff both grains with a fork and set aside.

Prepare the Tofu
Press the cubed tofu between paper towels to remove excess moisture. You can also marinate it in soy sauce for extra flavor if desired.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 2-3 minutes until fragrant. Add the diced bell pepper and carrot, and continue to sauté for another 5 minutes until the vegetables are tender.

Add the Peas and Tofu
Stir in the frozen green peas and cubed tofu. Cook for an additional 3-4 minutes until the peas are heated through and the tofu is lightly golden.

Once everything is well mixed and heated, remove from heat. Serve warm, and enjoy your nutritious mixed rice dish!
