Preparation

  1. 1

    Cook the Grains

In a medium pot, combine 1 cup of brown rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes until the rice is tender and water is absorbed. In a separate pot, combine 0.5 cup of quinoa and 1 cup of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Once cooked, fluff both grains with a fork and set aside.

  2. 2

    Prep the Vegetables

While the grains are cooking, dice the bell pepper, carrot, and onion. Mince the garlic and set all the vegetables aside.

  3. 3

    Prepare the Tofu

Press the cubed tofu between paper towels to remove excess moisture. You can also marinate it in soy sauce for extra flavor if desired.

Cooking

  1. 4

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 2-3 minutes until fragrant. Add the diced bell pepper and carrot, and continue to sauté for another 5 minutes until the vegetables are tender.

  2. 5

    Add the Peas and Tofu

Stir in the frozen green peas and cubed tofu. Cook for an additional 3-4 minutes until the peas are heated through and the tofu is lightly golden.

  3. 6

    Combine Everything

Add the cooked brown rice and quinoa to the skillet with the sautéed vegetables and tofu. Pour in 3 tablespoons of soy sauce, and season with salt, black pepper, cumin, and paprika. Stir everything together gently to combine and heat through for about 2-3 minutes.

Serving

  1. 7

    Serve the Dish

Once everything is well mixed and heated, remove from heat. Serve warm, and enjoy your nutritious mixed rice dish!
