Prepare the Tofu
In a mixing bowl, crumble the soft tofu with a fork until it is well broken down but not completely smooth.

Add Flavorings
Add the chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper to the crumbled tofu. Mix well to combine all the ingredients.

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually pour in the boiling water while stirring with a fork until the dough begins to come together.

Knead the Dough
Once the dough is cool enough to handle, knead it on a lightly floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into small pieces and roll each piece out into thin circles, about 3 inches in diameter.
