Method

Preparation

  1. 1

    Soak the Soybeans

Rinse the dried soybeans under cold water, then soak them in water overnight. This will help to soften them for cooking.

  2. 2

    Prepare the Vegetables

Peel and dice the daikon radish and carrots into small cubes. Rehydrate the shiitake mushrooms by soaking them in warm water for about 20 minutes, then slice them thinly. Chop the spring onions finely.

Cooking

  1. 3

    Cook the Soybeans

Drain the soaked soybeans and place them in a pot with the dashi broth. Bring to a boil, then reduce to a simmer and cook for about 45 minutes, or until tender.

  2. 4

    Add Vegetables and Crab

Once the soybeans are tender, add the diced daikon radish, carrots, and rehydrated shiitake mushrooms to the pot. Simmer for an additional 15 minutes. Finally, gently fold in the crab meat.

  3. 5

    Season the Stew

Add the soy sauce, mirin, salt, black pepper, and sesame oil to the pot. Stir well and simmer for another 5 minutes to allow the flavors to meld together.

Serving

  1. 6

    Serve the Stew

Ladle the crab soy-bean stew into bowls, garnishing with chopped spring onions. Serve hot.
